The long awaited for sugary sweet birthday pie is our focus today, dedicated to the sweetest friend anyone could ever ask for. Brenda has been an amazing friend to me for many years. She is a treasure. Our girls even grew up in the church nursery together...started school together and we all survived the start of middle school together. Though we are a few miles apart these days, we keep in touch with social media and meeting up at the boardwalk for date nights. What better represents a great friendship than a pie?!
I'm sure there's some kind of acrostic poem for birthday/friendship pie, but I will spare you.I'm sure some of you have seen this decadent dessert on 'the pinterest' and let me just say, I literally pinned it as a joke. My oldest daughter however, wanted me to make it for her birthday back in September. So here we are...finally posting about it. Preparing it was almost comical because of the ingredients called for, but stick with it, it is really yummalicious! If you go the pre-made route for the pie crust and the cupcakes, this is one of the easiest desserts ever. AND your friends and family will love you even more.
WHAT YOU NEED:
Appx. 12-14 mini iced cupcakes, wrappers removed
1 stick butter, melted
1/4 cup granulated sugar
1 teaspoon vanilla
1 tablespoon vinegar
1 refrigerated pie crust, unbaked
Hershey's chocolate syrup or chocolate frosting for drizzling, optional
WHAT TO DO:
Preheat oven to 350.
Unroll the pre-made pie crust into a pie plate and crimp the edges to your liking.
Cut each mini cupcake in half and place them cut side down in the pie crust.
They will fill up the dish almost completely.
In a medium size bowl, combine eggs, melted butter, sugar, vanilla and vinegar.
Mix until well combined.
Pour evenly over cupcakes.
I know, it's insane. Keep going.
Bake for approximately 30-35 minutes.
For serving, drizzle chocolate syrup or frosting across cake
and throw on a few sprinkles if you want to be festive.
Yield: 8 servings (or more if you cut skinny pieces)
This was great fun to make and was a big hit for our birthday dinner.
